I am actually going to Cancun Aug. 16'th for a week. As far as finding several nights of travel vs a week for an all inclusive resort, you might want want to consider joining a travel club membership like the one I belong to at http://www.lovethetravelbug.com You can get discount travel vouchers for short stay vacations once you become a member. Another place you can go for discounts is Ebay. Sometimes there are whole weeks that can be as inexpensive as a few days. Most of the all inclusive places require a 7 day stay and then you can add another three days if you'd like unless you go through one of the membership clubs or pay more.
